Chincoteague Clam Fritters

Ingredients:

1 can Chincoteague Chopped Clams
2 cups flour
1 cup milk
2 eggs, gently beaten
1 cup corn oil for cooking
1 tablespoon baking powder
1 tablespoon melted butter
1 onion, fresh and chopped fine
1 teaspoon salt

Serving Instructions:

Drain the clams and save the juice. Mix the flour, baking powder, and salt in a bowl. In a separate bowl, mix the clams, milk, onions, butter, and eggs together. Blend the two bowls together, and stir in a little of reserved clam juice (to taste) until smooth. Heat corn oil to 360 degrees, and drop the mix in by the tablespoon. Fry until lightly browned, drain on paper napkins, and serve. Serves four.
